Slice a courgette into approximately half-centimeter rounds.
Dip each slice into beaten egg, then into shredded coconut (Would ground almonds work? Or hazelnuts?).
Fry over a low heat, turning and poking as little as possible, until they're at your required softness. If you've cut very thick slices covering the pan works well.
Serve with a sprinkle of salt and a dollop of mayo.
