Recipe: Borscht

Borscht is a traditional Russian soup, also popular in Poland and Ukraine. I doubt it resembles my version in anyway other than the colour :D

Into a pressure cooker put:

  • 2 scrubbed and (kind of) cubed beetroots
  • 2 grated carrots
  • about a cup of shredded white cabbage
  • 2 peeled garlic cloves
  • about a tablespoon of minced onion
  • a pound of beef ribs (save making stock separately) or some chunky beef
  • enough water to fill the pressure cooker up to the "max" line

Cook on high for about 20 minutes.
To serve, dollop some sour cream, creme freche, yoghurt, or coconut cream on top (depending on which diet you're currently following :D )
